The trick is to carefully pour the glaze over a cold cake so that it flows down the sides without any lumps.

The Easy Mirror Glaze Recipe

Let's simplify the procedure with a five-ingredient mirror glaze recipe. This variation bakes at a slightly lower temperature, making it a little easier and more accessible to home bakers.

Ingredients:

  1. Add 1 envelope (7g) of powdered unflavoured gelatin to 1/4 cup of water for blooming.

  2. Add 1 1/2 cups or 300g of granulated sugar.

  3. Prepare 3/4 cup (180ml) of water at room temperature.

  4. 2/3 cup (170g) of sweetened condensed milk.

  5. 2 cups (350g) of miniature white chocolate chips.

Method:

  1. To develop gelatin, dissolve it in water and allow it to bloom.

  2. Create the base: In a saucepan, mix together sugar, water, and sweetened condensed milk. Heat until the sugar melts.

  3. Remove from heat and toss in white chocolate chips to melt.

  4. To remove lumps, strain the glaze and cool it. Cool to around 90°F (32°C).

  5. Pour the glaze evenly over the chilled and smooth cake. Watch as the glazing transforms into a mirror, reflecting everything!

  1. This recipe uses white chocolate and sweetened condensed milk, which is different from typical methods. These ingredients not only cover the flavour of ordinary gelatin but also form a bright white base for easy colouring.

  3. The somewhat thicker glaze provides a better covering for beginners.T


these are the three mirror glaze cakes that I baked and decorated myself and i was super proud of myself to achieve this much at my first attempt.
